BottleTaps is looking for knowledgeable, customer service driven individuals to join us in creating the Bay Area’s newest and best Craft Beer Experience. We prefer candidates with Cicerone, Beer Judge or beer sensory training. Position Description – Chef

Essential Purpose

To develop, implement, and deliver a well well-crafted culinary program in cohesion with the BottleTaps Beer and Wine programs. To manage back-of-house (BOH) staff on a daily basis and oversee all kitchen and culinary operations.

To provide gracious hospitality and guidance through a memorable dining/drinking experience at BottleTaps for all guests of the taproom.

To manage labor, COGS, sales, and financials of the BOH portion of Bottletaps. To maintain and update menus as needed.

To effectively utilize the tools and resources provided to guide the Bottletaps BOH team on a path of consistent success.

To act as an ambassador of the taproom, to the community of Pleasanton, and the Tri-Valley area.

To consistently improve and refine the skillset and knowledge of all resources, equipment, and product pertaining to the position.

Take proper care of specific guest requests and accommodate them to the best of the taprooms ability while understanding restrictions set forth in the service guidebook.

Essential Duties

  • Menu development.
  • Ingredient sourcing.
  • BOH scheduling, labor, and payroll management.
  • Ability to manage Labor and Food costs to plan
  • Upkeep of current industry trends & product knowledge.
  • Opening and/or closing duties of the restaurant as a whole.
  • Weekly product inventory & purchasing
  • Hiring and management of staff performance.
  • Staff leadership in the kitchen specifically, and all outlets of the restaurant.
  • Maintain a clean and organized kitchen and storage areas
  • Day to day functions with vendors, purveyors, etc.
  • Updating food menus to website
  • Handling of staff concerns or incidents.
  • Direct management of all kitchen staff.
  • Successful and cordial collaboration with FOH staff and management.
  • Executive level reporting to ownership.
  • Daily opening and closing management duties.

Job Knowledge & Education Requirements

  • 5+ years of Chef or Sous Chef experience
  • Proven leadership traits.
  • Flexible schedule with ability to work 50+ hour work weeks, including nights, weekends, holidays.
  • Strong interpersonal, organizational & communication skills.
  • A passion for food, beer, wine, and the hospitality industry.
  • Ability to contribute to a wide variety of management tasks & operations beyond the kitchen; including marketing, private party organization, community outreach, staff recognition programs, staff education programs, and much more.
  • Proficient with Microsoft Excel; proficient with standard POS and CRM systems (specifically Revel is a plus)
  • Ability to pair foods with appropriate fermented beverages.

Extra consideration to those who possess:

  • Prior Gastro-Pub experience.
  • Experience restaurant operations.
  • Previous experience with small plates.
  • Strong beer & wine knowledge. Cicerone or Sommelier preferred.  Cicerone training will be required after hire.
  • Efficiency with Google programs (Gmail, Docs, Calendar, Drive, Sheets).

Physical Demands

Must be able to lift and carry up to 50 pounds.

Must be able to maintain composure and professional appearance for up to and sometimes exceeding 8 hour shifts.

Ability to handle hot food plates in an effective and timely manner.

Must be able to move seamlessly within the taproom in cohesion with several other staff members without interrupting or interfering with guest experience.

Essential Purpose & Duties

Accurately and efficiently cook meats, fish, vegetables, soups and other food products as well as prepare and portion food products prior to cooking. Perform other duties in the areas of food and final plate preparation including plating and garnishing of cooked items and preparing appropriate garnishes for all hot menu item plates.

To consistently improve and refine the skillset and knowledge of all resources, equipment, and product knowledge of the restaurant as a whole.

Properly orchestrate all opening and closing duties pertaining to but not limited to the specific position. Assist as directed in all operational side-work duties.

Have a working knowledge of all resources and tools pertaining to the BOH. Assist in the overall cleanliness of the restaurant and all equipment within.

Assume 100% responsibility for quality of products served. Know and comply consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.

Stock and maintain sufficient levels of food products at line stations to assure a smooth service period. Portions food products prior to cooking according to standard portion sizes and recipe specifications.

Maintain a clean and sanitary work station.

  • Associate degree or higher a plus, with preference in Culinary studies.

To effectively utilize the tools and resources provided to execute sales of food & beverage. To consistently improve and refine the skillset and knowledge of all resources, equipment, and product pertaining to the position.

To act as an ambassador of the taproom to the community of Pleasanton and the Tri-Valley area. To insure the well-being and safety of any guests consuming alcoholic beverage within the taproom and patio.

Assist in the inventory, accountability, and proper care and use of all beverage equipment and the beverage program. Maintain the proper functioning, maintenance and cleanliness of all bar and beverage program equipment.

Lead FOH staff members in a respectful manner. Assist in the closing duties and late-night operations of the taproom. Effectively act as a beacon of product knowledge pertaining to craft beer, wine, and all beverages served.

BottleTaps is the newest addition to the Tri-Valley restaurant and bar scene. We opened in December 2017 BottleTaps is featuring over 100 hand-selected craft beers, wine, mead, cider, Kombucha and an exceptional menu of contemporary small plates to complement our beer list. Restaurant General Manager
Position Description – General Manager

BottleTaps is the premiere Tri-Valley restaurant and tap room/bar. Opened in December 2017. BottleTaps offers over 200 hand-selected craft beers, wine, mead, cider, Kombucha and craft sodas. We feature an exceptional menu of contemporary small plates, sandwiches and other dishes to complement our beer and wine list.

We are looking for an experienced General Manager to supervise daily business operations. The General Manager should be experienced in a supervisory role, and be able to confidently deliver performance feedback, set goals, foster teamwork, and clearly communicate business objectives. We are looking for someone who shares our vision of what BottleTaps is and could be.

To be a successful General Manager, you should eagerly participate in educational and training opportunities. The GM must be able to motivate and positively influence staff. A top candidate for this position must have strong leadership, organizational and communication skills. The GM should be firm, but also approachable. BottleTaps is closed on Mondays but open for Lunch, Dinner and weekend Brunch Tuesday – Sunday.
